The president of the National Meat Institute (INAC), Gastón Scayola, confirmed that the agency’s sheep agenda includes installing black boxes at plants dedicated to the segment, a process that had been left unfinished.
Speaking to Rurales El País, he said the measure is “key to ensuring reliable and traceable information” in the sheep sector. This will be complemented by grading and quality classification of animals. While these processes are highly automated in the beef sector, sheep still lag behind.
“We will move toward automatic grading to classify animals by quality at each plant,” Scayola announced, aiming to align the product with premium market requirements. “We are firmly determined to certify that when we say we are selling lamb, it truly is lamb, and not a ewe disguised as lamb.”
The plan also includes developing a Uruguayan lamb certification, in coordination with the Uruguayan Wool Secretariat (SUL).
